「Plants, stems that are bundled and lacking」a single trunk are SHRUBS with low height and many shaft stems emerging from the soil. Conversely, a tree generally has a single main trunk with branches. Perhaps refers more specifically to HYDRANGEA, shrubs native to China that suck up large amounts of water ('hydrangea' means「water pot」in Greek).「Group of woodies」that「blow hard」and「suck up large amounts of fluids.」
